L’objectiu de la línia de recerca és obtenir ingredients útils per a la industria alimentària a partir de la sang procedent del sacrifici de bestiar porcí en escorxadors industrials, per tal de valoritzar aquest subproducte mitjançant l’aprofitament del seu valor nutritiu i de les propietats biològiques i tecnològiques de les seves proteïnes.
